Chef George Jardine is also called the "food alchemist"; he prefers not to typecast or label his style of cooking, but admits that it is founded upon contemporary European techniques and South Africa's finest seasonal produce; "the crayfish bouillon" starter is delicate and tantalising as "the terrine of duck confit"; for mains, "the beef filled with oxtail tender", tasty and cooked to perfection so it does not wonder that accolades have followed george wherever he has worked as chef, albeit in Europe, Asia, Australia or South Africa.
